Our process
Our careful and caring handling of our bees is the foundation of Amber Honey.

ROOTS
- We are a small-scale family business in southern Sweden. The heart of Amber Honey is Viktoria Bassani and her innovative way of caring for our bees and their honey.
- A love of nature and food craftsmanship led Viktoria to become a beekeeper in 2005. With a background in the wine world, Viktoria was able to weave her knowledge of taste and the senses to create unique honey varieties. Her approach is similar to that of a terroir winemaker: each honey harvest expresses the place it comes from. From flower to table, the focus is on preserving the unique character that different nectar sources and harvest times create in the honey.
- Over time, Viktoria has become a leading voice in honey sensory science in the Nordic region. In her work, she helps other beekeepers and honey enthusiasts open their senses to the nuances of honey. Welcome to nordichoneyacademy.se if you want to know more.

CRAFT
- For us, the most important thing is that our bees are strong and healthy. We help them survive the winter, and as a thank you, we get the honey that is left over when they have more than enough. This reciprocity teaches us a lot about human responsibility and natural contact with nature. We have noticed that the more we care for the bees, the more they care for us. The honey they give us is tasty and varied.
- Unfortunately, a lot of honey today is so refined that it loses all its character. Instead, we want to do as little as possible with it, so it retains its unique properties.
We handle all our honey in our honey house, located among the fields of Scania. We do most of it by hand, and our main tools are our senses. By seeing, smelling and tasting the honey, we can ensure that the aromas from each nectar source are clearly noticeable.
- When we create Bloom, our honey vinegar, we take the same care. We collaborate with another local family business that produces apple cider vinegar with the same artisanal approach. The vinegar is matured in oak barrels, and Viktoria uses her sensory knowledge to balance the honey and vinegar into the unique blend that becomes our Apple Honey Vinegar.

- Our philosophy is based on presence, love and respect. By striving for the highest quality from hive to jar, we honor the vital work bees do for our world.
- We named Amber Honey after amber. Like our apiaries, it is found on the southern coast of the Baltic Sea. Like our honey, it is a gift from nature, shaped by time and place. It is our way of celebrating terroir and the closeness to nature that permeates everything we do.
